stuffed chicken roll ups

Needed something yummy and simple for tonight's dinner so decided to try this recipe. Served with sweet potatoes.


Stuffed Chicken Roll Ups
1 package stuffing mix (I used stove top cornbread mix)
2 eggs, beaten
1 package thinned boneless chicken breasts
2 cans cream of chicken soup
3/4 cup milk
1 teaspoon paprika

Combine stuffing and 1 cup of water. Let stand for 5 minutes. Stir in eggs.
Spread evenly over each piece of chicken.
Roll up chicken from one short end to enclose stuffing.
Place seam sides down in 13x9 pyrex dish.

Mix soup and milk; pour over chicken .
Sprinkle with paprika.

Bake uncovered @ 400 degrees for 45 minutes or until done. (The original recipe says to cook 30 minutes but mine weren't done by then - maybe they were thicker or I stuffed them more ... so be sure your chicken is done before serving.)
