turkey and cheese in puff pastry

This is amazing. My friend, Nancy, made this over the weekend for our stitching Christmas luncheon party and well, I hope she didn't see how many pieces I devoured. The original recipe calls for soppressata salami but she used deli turkey as I did tonight and it. is. fabulous. It makes an ideal appetizer but I fixed it for an early simple dinner. Yum!


Turkey & Cheese in Puff Pastry
adapted from Ina Garten's cookbook, How Easy Is That?
1 package (2 sheets) puff pastry, such as Pepperidge Farm, defrosted
2 Tablespoons Dijon mustard
12 thin (not paper thin) slices Deli turkey
6 oz Gruyere cheese, grated
1 egg beaten with 1 Tablespoon water for egg wash

Preheat oven to 450 degrees. Place a piece of parchment paper on a sheet pan.

Lay one sheet of puff pastry on parchment paper lined sheet pan. Brush on all of the Dijon mustard. Top with turkey evenly avoiding edges for closure. Brush egg wash along sides. Top with other sheet of puff pastry. Brush top with egg wash and seal sides. Cut three slits in top for steam.

Bake 20-25 minutes, turning once during baking.
